One particular refreshment that has become a favorite in the islands is mais con hielo, or maiz con yelo. Its appeal comes from its ease to create and its simple, sweet, refreshing taste. Although available all throughout the year in many Filipino-themed restaurants, mais con yelo is especially sought after during the warm Philippine summer.

When the heat of summer strikes in the Philippines, Filipinos use it as an excuse to indulge in cold, refreshing treats that can make them forget, even if temporarily, that they indeed live in a tropical country.  One particular refreshment that has become a favorite in the islands is mais con hielo, or maiz con yelo. Its appeal comes from its ease to create and its simple, sweet, refreshing taste.  Although available all throughout the year in many Filipino-themed restaurants, mais con yelo is especially sought after during the warm Philippine summer.

Mais Con Hielo or Maiz con yelo is a mixture of shaved or crushed ice, milk, sugar and sweet corn kernels. Like halo-halo, mais con yelo is usually popular as a dessert or snack by itself during summer months in the Philippines.

There are many options on how one can enjoy this frozen delight. Aside from the usual ingredients, one can opt to serve it topped with pinipig, ice cream or corn flakes.

In the choice of corn to be used, one can have the whole kernel corn with crushed ice if it is preferred to be eaten with a spoon. Cream style corn is perfect if one feels like drinking the corn, together with the milk and ice, up to the last kernel. When it comes to milk, evaporated milk or fresh milk may be used depending on one's preferences. 

As it requires very little preparation aside from mixing the ingredients, it is particularly popular as a snack or dessert that can be made at home to be served with smiles and small talk with friends and family.
