A Break at the Restaurant

You have never really been to Cavite if you didn’t get the chance to taste some of the special delicacies that the province is well known for. Lying at the very heart of Cavite, Republic of Cavite Restaurant is a replica of Emilio Aguinaldo’s mansion in Kawit which covers a 4000-square-meter property. It has rooms that are named after historic places in the province.

Do you want to taste their delicacies called Lihim ni Lola, Lihim ni Emilio and Paborito ni Aguinaldo? Lihim ni Lola is original recipe of Town’s Delight’s matriarch Mama Cely. This is a very delicious violet rice cake that is not your ordinary rice pudding and a delight that only Lihim ni Lola can give. On the other hand, Lihim ni Emilio is a yummy dessert consisting of suman sa ibos, chico and mango topped with ice cream and pinipig. Last is the Paborito ni Aguinaldo, a fried camote strips rolled in ground peanuts and jackfruit strips and finally wrapped in lumpia wrappers.

These three yummy delicacies are best paired with cold salabat (ginger ale) flavored with langka, pandan, or tanglad. MMmmh. Yummy, I can’t wait to taste one of these delicacies.

A Peek at its Historical Rooms

A sojourn at Republic of Cavite Restaurant will not only give delight from their delicacies but also it nurtures one’s mind to the rich history of Cavite and the great role it played in history.

Starting from the ground floor, one may see the Plaza de Armas room which is where the province’s 12 martyrs were executed. Then the three “meeting rooms” also known as Silid Mapagtiis (a political party in General Trias), Silid Magdiwang (in Noveleta), and Silid Magdalo (in Kawit-Gen. Aguinaldo’s party are perfect venue for small gatherings.

The second floor houses the Bulwagang Cuenca, named after the ancestral Cuenca House in Bacoor, Cavite. It is the place where Gen. Aguinaldo once held his office. The room is perfect for big events such as weddings and venues and can accommodate a maximum of 100 (seated) guests.

At the attic, another historical room is the Sala De Gobernador. The room is patterned after Gen. Aguinaldo’s living room or sala where private meetings were held. It also serves as Towns Delight’s showroom on a normal day.

If you’re planning to have a big outdoor activity, you can rent their spacious garden that can accommodate a maximum of 300 guests. The garden is popular for weddings and debuts.

Glories of the Past

The 4,000-square-meter property was acquired by Pacumio’s parents ten years ago. He then decided to put up a business that would give pride to the Cavitenos that will showcase the historical places in Cavite and at the same time promote the province’s native delicacies. Set with his ingenious concept, he tapped other CaviteñosArchitect Ritchie Corcuera and historian Prof. Emmanuel Calayro—to help him execute his ideas.

In 2001, Architect Corcuera and his team started developing the property and after a year, the new Republic of Cavite was inaugurated.

How to get to Cavite

There are a lot of ways on how to get to this historical province. Listed below are some easy steps:

  • The main route is via the South Luzon Expressway ( SLEX ) with exit at Carmona that leads to the towns of Silang, Gen. Mariano Alvarez, Dasmarinas, Maragondon Ternate and cities of Trece Martirez and Tagaytay City;
  • Cavite can also be reached from Manila through Roxas Boulevard-Coastal Road going to towns of Bacoor, Imus, Kawit, Rosario, Tanza, Naic and Noveleta;
  • An alternate route is via Sta Rosa that leads to Tagaytay City and adjacent towns of Alfonso, Amadeo, Silang and Indang;
  • Public transport services are available during the day hours and early evening:
  • Buses like Saulog and St. Anthony going to Cavite have terminals in Vito Cruz cor Harrison Plaza and Park n Ride in Plaza Lawton in Manila:
  • Mini Buses going to the towns of Bacoor, Imus, Kawit, Noveleta, Rosario, Naic and Tanza are available from Baclaran in Parañaque;
  • Taxis and FX transport also service the nearby towns of Cavite.
